Scott Boles studied under President John F. Kennedy’s chef, Jim Berrini, in Boston while in school at Northeastern University. Afterwards, he worked in some of the finest hotels and restaurants in New England and then worked as the Executive Chef of the Village at Breckenridge, Colorado for 6 years. He was then recruited by Kenan Oil Corporation to take a North Carolina hotel from a non-rated resort to a 5-star rated hotel and afterwards moved to Florida where he owned two successful health-based restaurants. Scott was then recruited by Disney Corporation to open their new executive dining room with a menu based on health and wellness while still incorporating beauty and good taste into the entrees.
